From the terraced hills of Umm al-Fahm, this exceptional olive oil is harvested from a rare grove of organic Nabali trees, tended by the youngest farmer in Olive Odyssey's collective. The land — owned and worked by his family for generations — overlooks the wall dividing Palestinians living in the occupied territory from those in the West Bank. Despite this separation, the groves endure, and so does the tradition.
Each olive is handpicked and cold-pressed within 12 hours, preserving the full spectrum of its vibrant, fresh character. Unlike more common commercial cultivars, these Nabali trees are pesticide-free and fully rain-fed, offering an unfiltered expression of the region’s terroir and resilience.
This season’s oil is both bold and balanced, showcasing bright tangy notes that shine across dishes — a true celebration of Palestine’s living landscape, shaped by care, patience, and legacy.
